Parmigiano-Reggiano is unique in every
sense. It is composed of a special blend of charachteristics which no other
cheese can imitata or replace, and all attempts to produce a similar have
succeded only in highlighting the distinctive difference. Parmigiano-Reggiano is
also unique in the secondary sense of the word, in that it is far superior to
anything else of its kind. There is, simply, nothing else quite as good.
The special character of Parmigiano-Reggiano is
the result of several conditions whici cannot be duplicated:
-The milk of the "Zona Tipica"
-The cheesemaker's tradition which has rcmained unaltered for seven centuries;
-The guarantee that it does not contain any artificial additive;
-An entirely natural method of maturation under rigorous supervision.
The result is the unsurpassed flavor and high nutritional value of authentic
Parmigiano-Reggiano
An integrity preserved for seven hundred years
Parmigiano-Reggiano is called "the great cheese of seven centuries"
because the ancient formula has remained Unchanged throughout 700 years of
historv which transformed the face of continents. Today's cheese is the same as
that enjoyed by the armoured knights, bonded serfs and saints of history.
Records dating back to 1200-1300AD describe the characteristics of
Parmigiano-Reggiano as they have been handed down to this day. One can therefore
assume that the real origins of the cheese go back much earlier, to the fine,
but as yet unstandardised cheeses extolled by early Latin and that the
cheesemaking techniques developed in that epoch achieved in Parinigiano-Reggiano
a crystallisation which has withstood the test of time.
